A Healthy Spin on Traditional Cole Slaw

Try this healthy spin on traditional cole slaw at your next BBQ.
4 cups shredded cabbage
1 cup red bell pepper – chopped
1 cup green onions – chopped
1 cup of corn kernels – cooked
½ cup rice vinegar
1/3 cup Splenda or other sugar substitute; and modify to taste
1 tablespoon jalapeno pepper – finely minces – remove seeds and veins
½ cup cilantro – chopped
Salt and pepper to taste
Mix rice vinegar and Splenda together before adding to other ingredients. Toss well and enjoy!
