MOTHER'S DAY BRUNCH

While there are many ways to celebrate Mother’s Day, a delicious brunch is always the best way to start her day then she can relax and unwind. You don’t have to worry too much about your cooking skills, Chef Teresa has shared one of her favorite easy recipes that’s sure to impress! MothersDayBrunch_image

Oven Apple Pancake

½ cup brown sugar
1 t cinnamon
1 cup of flour
4 eggs
1 cup milk  
1 T sugar
Pinch of salt
1 t vanilla
Zest of 1 lemon
4 T butter
2 apples, peeled and thinly sliced
Powdered Sugar
Whipped Vanilla Mascarpone

Instructions

Combine brown sugar and cinnamon in a small bowl, set aside.

In a blender add flour, eggs, milk, sugar, salt, vanilla, and lemon zest.  Blend until smooth.  Let rest for at least 15 minutes.  Ideally, it works best if it is at room temp.

Heat oven to 400.  Place a 10- or 12-inch oven-proof skillet (or a pie pan) in the oven with the butter in it.  Let the pan heat up and the butter melt completely.   

Pull hot pan out of the oven and sprinkle brown sugar and cinnamon evenly over the surface.  Lay apples in an even layer.  Pour batter over apples.  These steps need to happen kind of quickly because you want the batter to hit a hot pan.

Bake for 18-24 minutes until cooked through and browned.  Dust with powdered sugar and serve immediately.  Serve with Whipped Vanilla Mascarpone. 

Whipped Vanilla Mascarpone

8 oz. Mascarpone cheese
1 cup powdered sugar
1 t vanilla
Whip all ingredients together until light and fluffy.

This recipe can be prepped the night before.  The sugar mixture, batter, and whipped mascarpone can all be made ahead of time.  You can also peel and sliced the apples in advance and store them in water with the juice of the lemon that you zested.
